I’m running Windows 10 LTSC with a custom start menu (StartIsBack). So far I have avoided all of Microsoft’s nonsense.
As long as I’m not ready to switch to Linux 100%, this is probably the best possible solution.

Since GNOME definitely doesn’t support workspaces per monitor (and I haven’t seen an extension that does), I don’t think this is possible.

You can use private mode or a different browser to login with multiple Teams accounts.
144/60 works fine for me on X. I only had to disable Vsync for the compositor. Games now run at full 144Hz on my main monitor, and the other two are running perfectly fine at 60Hz.
Though I’m still waiting for the day that I can finally make the jump to Wayland when nvidia support improves (or I have enough money for a new AMD GPU).

I also switched to Arch about a month ago, and I’ve been so surprised at how easy gaming on Linux has become. Even some games that use AntiCheat like Apex Legends run absolutely great.
I had to switch to X11 though, but that’s the fault of NVIDIA because the drivers are still causing problems on Wayland.
Distrobox is probably what you’re looking for.
