There’s an older and a new version of the addon. And it works well enough! Even has a helper to clean up the interface around the emby stuff.
The secondary emby app can still control the kodi box the same way also!
I’m an emby person myself and am enjoying LibreELEC a bunch. With the emby for Kodi addon I’ve gotten so used to having every single thing in one interface that when a situation presents itself where I’m using the actual emby app, I get disappointed with the fact that none of the other Kodi addons are there.
It’s pretty slick and once everyone is used to the Kodi interface for all apps/addons we’ve never looked back

Anyone have opinions about hiding this under a bed or other discreet location? (Closet, crawlspace, etc)
Maybe with hardwood floors or a closet that isn’t full of winter coats or something, but it makes me nervous. But I would like to kinda spread out the homelab a little

There is an emby addon that uses your server to keep track of profiles and stuff. It’s actually pretty sweet to get it set up.
LibreELEC all day if you’re just watching/listening (minus a little emulation support (OH and moonlight docker addon))

I have been on this hunt myself and am coming up short. Especially on the hardware at my disposal.
So far I’ve tried all the same stuff you’ve mentioned but am settling in to LibreELEC well enough with addons, including the emby next gen setup (got into emby before finding out about jellyfin)
what don’t you dig about LibreELEC?
Plasma bigscreen sounds like it would be the best, but I never got it to work right ( granted I was very new to Linux back then)

Yo just turn off that TVs version of HDMI control. (CEC, magic remote, etc) To avoid the scanning bullsh. (Sounds like Samsung)
Outside of that I kinda miss old copper phone lines to a certain extent. Analog stuff in general
Everything being digital removes any possibility of a signal being able to still be discerned even if it’s not absolutely perfect.
Old tech would be subject to static of course, but you could possibly still make out the TV channel or radio station, even if it’s not perfect.
These days, you hear or see a little tiling for a second and the media is gone until a good enough signal comes back.
